Set aside to drain. Add half a medium sized onion, thinly sliced, and cook til tender but not browned. Salt and pepper the onions to taste as well as 4-6 ounces of thinly sliced beef liver then dredge the liver in flour. Move the onions to the sides of the fry pan. Turn the heat up a bit and add the liver. Saute' briefly, til the flour is just browned nicely or to your own taste. I'm lucky to be able to. I remember years ago, when pregnant and having iron injections because my HB was somewhere below 10, talking to a friend with leukaemia, who was having monthly blood transfusions and who normally lived with a reading of 6 or 7. And it wouldn't have occurred to me to get my blood checked, so I'm glad it's happened. It might not be a bad idea to ask for a blood test.
